Vegan Blini

Method
  1. Measure and mix buckwheat flour, salt and yeast in a bowl.
  2. Warm up the soy milk to 37 degrees Celsius. Add canola oil and lemon juice.
  3. Make a hole in the flour and add the liquids in and mix until even.
  4. Let the dough rest under a kitchen towel in room temperature for 30 minutes, or until the dough starts to bubble or is clearly risen.
  5. Put some canola oil to a pan and add some of the dough with a ladle.
  6. Fry the blinis on even temperature, turn them when the center starts clotting. The other side doesn’t need as much time frying. Make sure both sides are beautiful golden brown.
Recommendations

You can serve the blinis with chopped red onion, oat-sour cream, mushroom salad, pickled cucumber and a slice of lemon.
