Cauliflower Fritters with Minty Yogurt Dip

  1. Blend the fresh mint and yogurt in your food processor until smooth. Season with salt and sugar. Place the mixture in a cheesecloth to drain overnight, keep in the refrigerator. The next day, put the mint yogurt in a bowl and whisk until smooth. Put it in the piping bag.
  2. In a blender mix salt flakes, chili powder, cumin and dried crickets or meal worms, use the mixture to season the cauliflower. Cut a small cauliflower into four slices and fry them in a deep fat fryer until crispy. Drain on a cloth. Serve the Cauliflower with the mint yogurt, spicy insect salt and some finely chopped fresh herbs.
