Tomato-Cricket Soup

  1. Peel and chop onion and garlic.
  2. Boil water, put tomatoes in the water 10 seconds. And peel of tomatoes.
  3. Put oil and butter in the kettle. Fry onion and garlic few minutes.
  4. Add fresh tomatoes and tomato puree, vege demi-glace and sesoning with black pepper, salt and sugar.
  5. Boil gently until 20 minutes.
  6. Add cream, mascarpone and cricket powder. Boil quickly.
  7. Blend immersion blender and then with the blender.

If you don´t have cream, you can use milk. If you don´t have fresh tomatoes, you can use only tomato puree. You make product also in vegan, replace milk products by vegan stuff, for example Alpro, Oatly.
