Locust Consomme

Ingredients

Method
  1. Dice vegetables, mince garlic and coriander, slice mushrooms.
  2. In a pot heat a little oil, sweat off all vegetables (except shitake mushrooms and pak choy.
  3. Stir in cricket powder, soy sauce, thyme, add the water.
  4. Bring to a gentle simmer, for 1 hour.
  5. Strain your broth through a coffee filter or a fine muslin.
  6. Adjust seasoning with additional soy if needed and a squeeze of lemon juice.
  7. In a separate pan, sauté sliced shitake mushrooms with chopped locust in butter, season.
  8. Use broth to poach the pak choi quartered.
  9. Serve pak choi with the sauté shitakes, chopped Thai basil, coriander and chilli. Pour broth over vegetables.
