Method
- Dice vegetables, mince garlic and coriander, slice mushrooms.
- In a pot heat a little oil, sweat off all vegetables (except shitake mushrooms and pak choy.
- Stir in cricket powder, soy sauce, thyme, add the water.
- Bring to a gentle simmer, for 1 hour.
- Strain your broth through a coffee filter or a fine muslin.
- Adjust seasoning with additional soy if needed and a squeeze of lemon juice.
- In a separate pan, sauté sliced shitake mushrooms with chopped locust in butter, season.
- Use broth to poach the pak choi quartered.
- Serve pak choi with the sauté shitakes, chopped Thai basil, coriander and chilli. Pour broth over vegetables.
