Method
- Saute onion and garlic in oil until translucent.
- Then add the chopped tomatoes, tomato puree and vegetable stock along with the rest of the vegetables and beans and simmer until soft.
- Boil pasta according to the package instructions.
- Once ready add to the soup along with the herbs and tofu.
- Top with fresh herbs.
