Method
- Peel the asparagus with a peeler and remove the woody end of the asparagus.
- Blanch the asparagus and rinse cold.
- Peel the potatoes and grate them coarsely or julienne.
- Mix the potato strips with the egg and season to taste.
- Fry rösti rounds in a ring on both sides.
- Cut onion and tomato into brunoise, add paprika.
- Press the garlic.
- Fry the onion, paprika and garlic.
- Add the vegetarian mince and stir fry.
- Add the spices and fry.
- Add the tomato and let it boil.
- Add Kidney beans.
- Heat the asparagus, the rösti potatoes and arrange them on the plates.
- Scoop the Chili next to them.
- Garnish with coriander leaves.
