Carrot Cake with Puffed Rice, Grasshoppers, Crickets and Buffalos. Foam and Coconut-Curry Ice Cream

Techniques: Boiling, baking, simmering


  1. Make the Puffed rice.
  2. Make the Coconut-curry ice cream.
  3. Make the Carrot cake.
  4. Make the Citric rice pudding foam.
  5. Plating: First place the rice crisps with the worms and the crickets on the base of the plate. On both sides put two dices of carrot cake, a quenelle of ice cream in the middle and put the foam close to the dices of carrot cake with a siphon. To finish place the grasshoppers on the ice cream. Decorate with rosemary flowers.

Not necessary to use all kind of insects, if some of them is missing.
