Strawberry Mousse

Serves: 4 Persons

Techniques: Making a mouse


  1. Uncrown the strawberries and puree the strawberries with a hand blender.
  2. Add the sugar and chocolate to the strawberry puree.
  3. Bring to a boil and add the gelatin soaked in water.
  4. Let this cool until the mass begins to gel.
  5. Beat the whipped cream to soft peaks.
  6. Fold the whipped cream with the strawberry puree/strawberry composition.
  7. Fill the 2/3 of glasses with this composition and let it cool in the refrigerator.
  8. Beat the egg whites with the 100 g of sugar to stiff peaks.
  9. Pipe the whipped egg whites on the mousse with a piping bag.
  10.  Fire the top of the egg until brown with the blow torch.
  11. Garnish with strawberries.
