Method
- Uncrown the strawberries and puree the strawberries with a hand blender.
- Add the sugar and chocolate to the strawberry puree.
- Bring to a boil and add the gelatin soaked in water.
- Let this cool until the mass begins to gel.
- Beat the whipped cream to soft peaks.
- Fold the whipped cream with the strawberry puree/strawberry composition.
- Fill the 2/3 of glasses with this composition and let it cool in the refrigerator.
- Beat the egg whites with the 100 g of sugar to stiff peaks.
- Pipe the whipped egg whites on the mousse with a piping bag.
- Fire the top of the egg until brown with the blow torch.
- Garnish with strawberries.
