Method
- Ensure tofu is dry, pat down with paper towel thoroughly.
- Preheat the oven to 220C.
- Dice tofu in to 1 inch cubes.
- Bake the tofu until golden brown (about 10 mins on each side).
- Mix together spices and corn starch, toss tofu in spice mix, dust off excess.
- Heat a little oil in a pan and lightly fry the tofu cubes.
- In a food processor, blend the avocado, garlic, lime, salt and pepper until smooth, a tbsp of water can be added to adjust consistency.
- In a separate bowl shred both lettuces using a grater, chop the coriander and thinly dice the chili.
- Mix together with apple cider vinegar and set aside for assembly.
- Build tacos with a layer of slaw, warm tofu and a drizzle of avocado cream.
