Blackened Tofu Tacos

Ingredients

Method
  1. Ensure tofu is dry, pat down with paper towel thoroughly.
  2. Preheat the oven to 220C.
  3. Dice tofu in to 1 inch cubes.
  4. Bake the tofu until golden brown (about 10 mins on each side).
  5. Mix together spices and corn starch, toss tofu in spice mix, dust off excess.
  6. Heat a little oil in a pan and lightly fry the tofu cubes.
  7. In a food processor, blend the avocado, garlic, lime, salt and pepper until smooth, a tbsp of water can be added to adjust consistency.
  8. In a separate bowl shred both lettuces using a grater, chop the coriander and thinly dice the chili.
  9. Mix together with apple cider vinegar and set aside for assembly.
  10. Build tacos with a layer of slaw, warm tofu and a drizzle of avocado cream.
