Seitan Hot Dog with Crispy Onion and Mealworms

Method

  5. Mix water, vinegar and sugar until the sugar dissolves. Slice the cucumber into very thin slices with a mandolin or knife . Add to the solution and allow to marinade for 10-15 minutes. Drain before serving.
  6. Just before serving fry the seitan sausages in a pan. Slice the hot dog rolls in two and add the sausage top with onions, cucumbers and mayonnaise. Dress with a squirt of mustard and ketchup.
