Vegetable Pakoras

  1. To make the dough, mix the chickpea flour, coriander, garam masala, salt, turmeric and chili powder in a large bowl.
  2. Make a well in it and add 1 tbsp groundnut oil, the lemon juice and 2 tbsp water, mix into a firm dough.
  3. Pour in the rest of the water while stirring and whisking well with the whisk (you can also use a mixer for this). Continue this until a smooth dough is formed that looks like thick cream.
    Finally, stir in the caraway seeds, cover the bowl and let the dough rest for at least 30 minutes.
  4. Deep fryer at 180C.
  5. Pass the cauliflower florets through the dough, let it drip before putting them in the hot oil.
    Do not bake too many at the same time and max 3 minutes, until they look brown and crispy.
  6. After baking, drain them on a piece of kitchen roll.
