Method
- To make the dough, mix the chickpea flour, coriander, garam masala, salt, turmeric and chili powder in a large bowl.
- Make a well in it and add 1 tbsp groundnut oil, the lemon juice and 2 tbsp water, mix into a firm dough.
- Pour in the rest of the water while stirring and whisking well with the whisk (you can also use a mixer for this). Continue this until a smooth dough is formed that looks like thick cream.
Finally, stir in the caraway seeds, cover the bowl and let the dough rest for at least 30 minutes. - Deep fryer at 180C.
- Pass the cauliflower florets through the dough, let it drip before putting them in the hot oil.
Do not bake too many at the same time and max 3 minutes, until they look brown and crispy. - After baking, drain them on a piece of kitchen roll.
